Ginger Cookies

I am off to bake cookies...they have chopped up candied ginger in them! Taste testing tomorrow...

Taste test results: Oh my...these are so YUMMY!!! I promise I will try not to eat them all so that I can share them with you friends.

As Requested (Janet), here is the recipe:

Candied Ginger Cookies
3/4 Cup Butter (i used Marg.)
1 Cup sugar
1 egg
2 1/2 Cup flour
2 tsp. soda
1 tsp. cinnamon ( I used a tablespoon)
1tsp. cloves
1/2 salt (I omitted this)
1/2 Cup, chopped candied ginger

Mix butter, sugar, and egg in bowl. Set aside. In second bowl mix flour, soda, spices and salt. Add to flour mix to other 'wet' mixture. Mix well. Add cut up candied ginger. Chill (i did this in the fridge for only about 15 minutes. Heat oven at 350. Roll into balls, dip top into sugar and then flatten on baking pan with bottom of a glass. Bake for 10 minutes.

*note: I think these would be even better with some molasses in them. I found the candied ginger at a local grocery store, with the dried fruit. Shaun loves this stuff (so does my mom) and eats it like candy.
